Amount Ingredient
2 Cup(s) *cannellini beans; cooked and drained
6 roma tomatoes; cut in quarters
1/4 Ounce(s) opal basil; leaves &;sprigs
1/2 Bunch(es) scallions; very thinly sliced
2 Clove(s) garlic; minced
3 Ounce(s) extra virgin olive oil
1 Ounce(s) balsamic vinegar
1/2 lemon; juice only
salt and pepper
6 goat cheese medallions; 1/2 inch thick
18 opal basil leaves; cut in very fine shreds to garnish

Directions:

Place warm beans, tomatoes, garlic, lemon juice, vinegar &;olive oil in a bowl. Blend gently together. Correct the seasonings. Add the basil &;scallions and toss together. Arrange goat cheese on individual plates with the bean-basil-tomato mixture.
